Tomato, black olives, feta and sardines tart

  • 1 pack of sardines in olive oil
  • 1 red onion
  • 2 garlic cloves, finally chopped
  • 300 g plum tomatoes, peeled, seeded and chopped
  • Thyme springs
  • 100 g feta, crumbled
  • 20 Kalamata olives
  • 1 pack of crispy pastry
  • Olive oil

Preheat the oven to 180C° .
Heat 1 tablespoon of olive oil in a large pan over a medium heat. Add the onion and garlic and cook for 4-5 minutes, or until softened. Add the tomatoes, thyme and cook, stirring occasionally, for 20 minutes or until the mixture has thickened. Remove from the heat and leave to cool.
Place the pastry on an oven tray and spread the tomato mixture evenly over the base. Scatter over the feta and the olives, top with the sardines and drizzle with olive oil. Bake the tart in the oven for 25-30 minutes. Serve warm or cold.
